Journey 2 A Dream Institute is a Texas-based 501(c)(3) organization geared toward educating and empowering its constituents about the power in making great food choices and feeding the body with amazing nutrition, without losing one’s orientation to flavor and taste! Much more than an organization that just highlights food, Journey 2 A Dream Institute is part of a much needed movement in American society– to restore consciousness around the healing power of plants, spices, herbs, healthy choices around protein and more!
Founded by Eboni Dionne, in January of 2022, Journey 2 A Dream Foundation is a natural extension of a full body of work that she has developed over the past 10 years in culinary education, through a curriculum-based community education module she shares in schools, community centers, corporate staff developments and more, and at her Fort Worth, Texas based restaurant, “reBirth of Food.”

Her professional and educational journey has been very interesting in the accumulation of skills, knowledge and wisdom has been garnered in her 20 year career.
She has earned a B.S. in Biology, Masters of Public Health, Certified Health Coach and is also a Master Trainer for two Stanford University Evidenced Based classes for Chronic Disease management. Ms. Dionne is also a Chef that specializes in Vegan & Vegetarian Soul Food, taking traditional recipes and transforming them into dishes of the most satis-fying, delicious meals of balanced sustenance.

Simeon Henderson has over 20 years of leadership experience with an emphasis on community capacity building, leadership development, financial development, and multi-branch operations. Henderson currently serves as the Senior Project Manager for Urban Strategies, Inc (USI). Henderson leads the People Implementation Strategy for the Stop Six Choice Neighborhood Initiative. Henderson is responsible for equipping the former Cavile Place residents with the tools they need to be successful and ensuring they remain engaged with the Choice Neighborhood initiative to experience the plan’s benefits.
Prior to joining USI, Henderson spent nine years with the YMCA organization in
Milwaukee, Kansas City, most recently serving as the Southeast District Executive Director for YMCA Metropolitan Fort Worth. Under his leadership, the new 16-million-dollar state of the art William M. McDonald YMCA opened its doors to serve the Southeast community in January of 2019. This project is located in the Renaissance Heights development and is part of a Purpose Built Community.
Simeon Henderson has extensive experience supporting initiatives to improve health, alleviate hunger, and strengthen communities by providing access to quality health education, fitness programming, and nutritious foods. Throughout his career, Henderson has dedicated himself to the service of others beginning with his honorable service in the United States Marine Corps and on various non-profit Boards.
Simeon Henderson’s life passion is working to transform communities. He has traveled and provided humanitarian support to different parts of Africa, Asia, and North America. A native of Milwaukee, Wisconsin, Henderson enjoys spending time with his family, competing in triathlons, and studying the diverse cultures of the world in his spare time.

Outside of accidental death, chronic diseases are the leading causes to premature death. The primary 3 causes are Cancer, Heart Disease and Diabetes, and at their root have been largely associated with diet and lifestyle choices.
The rates continue to grow to epidemic proportions. This class was created to address the disparities within the community. Bridging the gap of resources and information to those who may find cultural and lifestyle deterrents to trying something new and unfamiliar.
Fatback is a traditional staple in the Southern kitchen, and departing from such ingredients can be difficult for most. Learning how food works to maintain health and providing alternative ways of preparing your food is paramount in taking the necessary steps for self-efficacy and overall well-being.
After a conversation with a colleague when discussing her philosophy on her personal transformation and now life mission, the class and name "Life After Fatback" was born.
